Two Great Diabetes Recipes

If your doctor has recently diagnosed that you have diabetes, you may be starting to get tired of the foods that he has told you is "safe" for diabetics for eat. In addition, you may be getting concerned about the kind of foods you can or are allowed to eat and what you should avoid. Many diabetic people think that they cant really eat anything. There are, however, some fantastic diabetes recipes out there.

Beverages

If you used to drink smoothies, you're probably missing them now! There are diabetes recipes that will let you enjoy smoothies again. For a diabetic friendly smoothie, you'll need the following:

1 medium size banana, peeled and cut in chunks
1 cup pineapple, grape, orange or apple juice, chilled
1/2 cup milk
1 tsp vanilla
3 ice cubes

Simply put all ingredients in a blender and blend until frothy. This fruit smoothie is one of the many diabetes recipes that has low sugar content and high in vitamin C.

Desserts

Eversince you've been diagnosed with diabetes, dessert is probably the one thing you haven't been able to have. There are many diabetes recipes out there you can make and eat for dessert. One of the many diabetes recipes is the applesauce loaf cake. You'll need the following:

1/2 cup walnuts, chopped
1 1/2 cups applesauce
1 egg
1 cup sugar
2 tbsp oil
1 tsp vanilla extract
2 cups all purpose flour
2 tsps baking soda
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 cup raisins

Pre-heat the oven to 350 degrees. Grease two 8 x 4 x 2 loaf pans. Lightly toast walnuts in an ungreased skillet pan. Stir walnuts on medium-low hear for 5 to 7 minutes. Set aside toasted walnuts. In a bowl, combine applesauce, egg, oil, vanilla and sugar. In another bowl, mix the flour, cinnamon, nutmeg and baking soda. Pour flour mixture into the bowl containing the applesauce mixture. Add raisins and toasted walnuts. Pour batter into the two pans and bake for 45 to 55 minutes.
